As it seems to be her new hobby of thrusting things on me without warning whenever I go home to visit my parents, my mother did so again by surprising me with some avocados. I do say "surprise" because, I have never known her to eat avocados and I usually have to force them upon her by sliding them into smoothies or meals whenever I come around. So, I definitely did not have any intentions on cooking when I came to visit for the weekend.

I might have mastered the art of multitasking . Although I do enjoy cooking , I feel like many days it takes up a lot of time. That's partially because when I do cook, I'm always making a large dish or a meat with two side items, with some rice or pasta. Because of this, I have been trying to use the oven more so I did not feel like I have to hover over the stove and babysit the food. This frees up my hands and attention so I can do other things while the food cooks itself. So...what did I choose to do? ??

Vegans eat rice, right? Of course. Everyone loves rice. It's seen as a low-calorie carb that is easy to digest and won't cause weight gain. I've been experimenting with healthy cooking in order to load up on fruits and veggies, increase energy, slim down, and just overall, be a healthier me. So, I started this dish off with rice. In this case, lots and lots of rice because I always make the mistake of adding too much rice whenever I make anything (I'm not really into measuring). So, naturally, I ended up with enough rice to feed eight people. (Which definitely makes me sad, but I will talk more about how I countered this overcooking  to make healthy eating easier on my life to maintain.)

Alright. One of the things we always keep in the house for their relatively long shelf life (in comparison to most other fruits and vegetables) are potatoes. These starchy treats can be cooked in a variety of ways, and after experimenting on my own using several different, I've settled on this sort of pan "boiling" to be the house favorite. Pretty simple to do; it requires cutting the potatoes into medium/thin slices (which cook faster). I did a large bowl of these potato slices on this particular day, as they also reheat well and taste pretty good cold, so therefore, they can be left out and used as a regular snack.

I have no great kitchen skills. I am not all that great at cutting up meats or vegetables, I have nearly lost quite a few fingers in my journey to consume healthier foods, and I have used more than my fair share of olive oil in an effort to cut back on the delicious and fattening dairy product, butter. So, when I looked into the fridge this morning and noticed that I'd barely touched the mushrooms I got from the grocery store last week, I knew that it was a good day to cook. As I haven't ever used this crock pot (which has actually never been used by anyone in this household as it was still taped up in the packaging it was delivered in), and since we have been eying each other for several months during this very interesting, rewarding, and new journey in my life as a woman who cooks, I finally gave in and sliced the tape on the box.

What do I keep in my kitchen on a regular basis? I'm trying mighty hard to be healthy, decrease calories, increase nutrition. Less sugar. More fiber. The list goes on and on. So, should we? Really,  Americans snatching up the cuisine of other cultures and turning them into something new, is nothing new. America has always had a voracious appetite for culture snatching. If you don't believe that, how do you think stuffed crust pizzas evolved? Native American "inspired" shirts and sweaters? The obsession with Native American headdresses? The "new phenomenon" of cornrows? ? Even this blog which focuses around matcha, sushi, yoga, and fasting (which are from different cultures, by the way). Why do I list fasting in that list? Because, in America, not eating for a day or several days is not something that anyone does by choice. It's a sign of not having enough, of poverty, or, to go in the other direction, of an eating disorder, but more on that later.

I saw this post that was saying that people need to stop holding on to what has hurt them, that true forgiveness means you are done being angry, and that anger somehow poisons your own soul. A few weeks ago, a friend and I uprooted the grass on this overgrown, raised, garden bed on the side of the house I currently reside in, replaced the wood sidings, picked up several bags of well-draining soil, a hoe, and some mums, and transformed the little flower bed. But now, summer has gone and autumn is upon us with winter quickly approaching and I have been throwing every skin or peel from every fruit or vegetable I've eaten into homemade composting buckets. Then the bright idea popped into my head to use the entire garden bed as composting soil since I can't grow anything in it during the winter. 4

One of my fitness goals for 2017 was finally being able to do a forearm stand. I wasn't being too ambitious. Being able to do a forearm stand while supporting my head was something I'd never been able to do even when I was at my fittest in high school dancing 8+ hours every week. This told me that whatever I'd done in the past had not truly helped me with my forearm stand, which is only partially upper body strength, but, from what I've experienced, is mostly abdominal strength and balance. Abdominal strength has never been one of my strong points, and if you caught my other post, Abdominal Strength: Thoughts From a Girl Who Has Always Been Killed By Crunches, then you know that abs and I have never been close. 7
